Stove Top: In a saute pan over medium heat, add a little oil or butter of your choosing- saute rice for 5-8min or until heated through. Transfer to a plate and cover to keep warm while you cook the chicken! In another (or the same) saute pan, add a little oil and heat over medium heat- add the chicken breast and sear on both sides for 3 minutes or so. Once the chicken is heated through, add the picatta sauce and swirl the chicken around to coat in sauce. Plate rice and chicken with the sauce from the pan and enjoy!
Oven Method: Preheat the oven to 400. In an oven-safe dish, add rice to the bottom and place chicken breast on top. Cover and bake for 15- 20 minutes until heated through, remove from the lid, and pour picatta sauce over the top. Bake again for another 5 minutes without the lid. Remove from oven, plate and enjoy!

Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for two squares start with a 1/2 cup of milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency. Plate up in a bowl, dress arugula and pecorino with sundried tomato dressing, and top your soft polenta with the arugula salad. Griddled Polenta: Heat a non-stick pan over medium heat- add a little oil or fat of your choice and place polenta down on the hot pan. Gently move the polenta around so the oil gets underneath. Griddle for 10 minutes or until the polenta is crispy and golden brown. Watch your heat because the polenta can burn!
