Pesto & Sweet Potato Polenta Salad

Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for two squares start with a 1/2 cup of milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency. Plate up in a bowl, dress arugula and pecorino with sundried tomato dressing, and top your soft polenta with the arugula salad. Griddled Polenta: Heat a non-stick pan over medium heat- add a little oil or fat of your choice and place polenta down on the hot pan. Gently move the polenta around so the oil gets underneath. Griddle for 10 minutes or until the polenta is crispy and golden brown. Watch your heat because the polenta can burn! Once your polenta is crispy, remove from heat and dress your arugula and pecorio salad. Plate salad and polenta together and enjoy!

Pre-heat oven to 375 degrees. Place the coq au vin and all the vegetables into an oven-safe dish (make sure you scrape out all the saucy goodness from the package!).
