Stovetop: We marinade pasture raised pork Belly in ginger, tamari, sesame and rice vinegar and braise it until tender to add a new twist to our traditional ramen. Still loaded with tender shiitake mushrooms and detoxifying spring greens like dandelion and herbs. Warm broth over medium heat, stirring frequently. Lotus gf noodles included. In a separate saucepan add ramen cakes to boiling water. After one minute start separating noodles gently with a fork and reduce heat to a low boil. Cook for 3 minutes or until noodles are just soft. Strain and rinse with cold water to avoid sticking.

Socca is a French flatbread made from ground chickpeas, so its loaded with protein and fiber! Start it on the stove by pouring a half cup of ready made batter into a non-stick lightly oiled pan (preferably cast-iron). Pour the batter evenly on your hot surface. Wait till it lightly bubbles in the middle and then place in a pre-heated 400 degree oven for about 5-7 minutes. Top and finish with whipped feta and oven roasted tomatoes with garlic and olive oil.
