At Golden Roots Kitchen we take pride in offering our community quality, nourishing meals, as well as inspiring the power of radical self-care. If you are a member of the GRK community then it is likely that you share similar values, and are choosing to prioritize them in your life. While sourcing quality ingredients and thoughtfully preparing meals is the bulk of the work to eating well, it isn’t the whole journey. We often hear the phrase “you are what you eat." I want to make the case that— you are not just what you eat, but how you eat, and what you digest and assimilate. The practice that coincides with this idea is known as mindful eating. 

Mindful eating has been practiced by traditional and ancient cultures for centuries, and has been known to bring the body into the most relaxed state for optimal digestion. In modern Western culture we have lost touch of this practice, and in return lost touch with our food. Chronic disease is at an all time high, and nearly all disease can be rooted back to stress and inflammatory markers in the body. In Eastern and alternative medicine practices it has been stated that inflammation and dis-ease begins in the gut —the digestive system, which is the portal from the external world to the internal. The digestive system is a complex organ system that sustains our precious life force by taking nutrients from the food we eat and converting them to energy. In order for this system to do it's hard work, the body needs communication that it is safe to do so. The practice of mindful eating is one that reaps tremendous mind/body benefits, and is something that you can start practicing today.

How Our Eating Habits Determine Our Digestion

The nervous system plays a crucial role in our eating patterns and habits. For example, if you find yourself eating on the go, in a stressed or anxious state, or answering consuming emails, the body naturally opts out of the full digestive process. Instead, the body senses a threat, whether real or perceived, and adapts to get you out of harm's way — aka increased insulin and cortisol. Being conscious and intentional with our eating habits allows us to live in harmony with our body. It allows us to honor and show gratitude for those who used their life’s energy to produce our food. This practice invites us to feel connected to the luscious lands that nurtured our food. A mindful eating practice brings us deeper in connection with our life force, and we in turn can more clearly understand what our individual needs are. 

If you feel called to dive deeper in understanding the physiology of the nervous system and how it relates to digestion, I invite you to scroll down below the diagram at the end of the post where I break it down. There is a lot of juicy information surrounding this topic and I want to send you off with tangible and practical ways to implement all of this and get started on developing a mindful eating practice. With this information you can understand how to best support and train your nervous system to come back into balance.I invite you to adopt your own unique practices and meet yourself where you are right now. 

Be present with your meal

  • Being present and showing gratitude for your food can be a special way to create a healthy relationship with your body. 

  • Bringing awareness to your food allows your body a safe space to feel pleasure from food, digest, feel nourishment + fullness. 

  • Deep breathing before and after meals activates the vagus nerve - a nerve that assists in the complex processes of digestion

  • Mindfulness creates trust within, and allows you to become aware of your unique cues, emotions and stories revolving around food. 

  • We cannot go without food and we must learn to live in harmony with it.

Chew your food

  • This is a big one! 

  • Chewing allows your digestive juices to report to the scene.

  • Aim for 30 chews per bite! 

  • Digestion starts in the mouth - enzymes in your saliva begin the process of breaking down food. 

  • Eating too quickly or swallowing food whole tricks the system and causes the stomach to take on tasks it was not designed for, resulting in digestive distress.

Limit Distracted Eating

  • Eating while stressed, stimulated, distracted or using devices is a no-no. 

  • This one is a hard one for many people and it all ties back to being present with your food. 

  • When food enters the mouth a multitude of signals are sent to the brain - including sensory and nutritive signals. 

  • If you are distracted your brain will believe it missed out, sending mixed signals causing you to eat too much, not feel satisfied and then feel the urge to eat more to feel that pleasure response. 

  • This one's for all you eating at your desks, on your phones and while driving ;-)

One Bite at a Time

Consider incorporating mindful eating into your life. Start with a deep breath, a prayer of gratitude, a break while you enjoy and begin to digest your meal. Creating new habits is hard but the good news is, every bite is another opportunity! The Dual States of Being; Relaxation Response (PNS) VS Fight or Flight (SNS)

The amygdala is the part of the brain that processes emotion, gathers this sensory information and sends messages up to the hypothalamus. The hypothalamus is the brain's control center, the captain of the ship. The hypothalamus sends signals throughout the body via the autonomic nervous system (ANS), which controls involuntary functions within the body. The ANS is divided into:

  1. Sympathetic nervous system (SNS)

  2. Parasympathetic nervous system (PNS). 

The SNS responds and protects you in life-threatening situations by firing off hormones such as adrenaline and cortisol that produce physiological changes to run from danger. When the SNS is activated you experience increased heart rate and blood pressure, increased alertness, perspiration, dry mouth and the digestive and reproductive systems take the back seat. This response is commonly known as “fight or flight”. This response is necessary — to protect us when the body and brain perceive danger, and to keep the immune system sharp.  Repetitive activation of the stress response, especially low grade chronic stress, takes a toll on the body and increases the risk for countless chronic diseases and symptoms — we all know this!  

Meditation, breathwork and deep relaxation practices are tools each of us can access that can activate your relaxation response. The parasympathetic nervous system puts the brakes on the stress response — and brings our body back into harmony. The PNS activates “rest and digest” signals to the body that we are out of harm's way and can safely relax. When the PNS is activated we are in deep relaxation: the body is able to heal, heart rate and blood pressure decrease and the digestive system is ready to do its job again! By rewiring our nervous system we can learn to better cope with stress, gain new perspectives on stressors, focus on the present moment, bring clarity to our challenges, and simply slow down and be.

Partner Spotlight: Spade & Plow

Golden Roots Kitchen community welcomes 2021. What a roller coaster ride getting through 2020! It has left us feeling more inspired than ever to serve our beloved Santa Cruz with nourishing meals. GRK was born out of the belief that food is the foundation of a strong community. We truly cherish the support we continuously receive from all of YOU. We are honored to partner with amazing local, small businesses that share our same food philosophies.

Today we spotlight Spade & Plow, a certified organic, family owned farm located in San Martin, California. We have had the pleasure of working with Sam Thorp, who originated Spade & Plow in 2015 alongside his brother, Nick and father, Mike.

The vision for Spade & Plow was conceived by their desire to connect the consumer directly with the farmer. Their intent is to grow the most nutrient rich, tasteful organic fruits and vegetables, producing locally raised food for their community.

The Thorp family has many years of experience in agriculture, giving each member a unique perspective. Mike has life long experience in production, Sam, a strong sales and marketing perspective, and Nick, post harvesting, safety and mechanical expertise, all equally important in running a sustainable farming business. The partners became exhausted with corporate agriculture and believed in a better way of doing things. This belief brought life to Spade & Plow.

San Martin, located in Santa Clara County, is known as the “valley of hearts delight.” This area was once famous for its rich soil, perfect for grapevines, citrus, nuts, cherry trees and fruits of all kinds. In the past San Martin was home to many small family farms. Development and commercial projects have caused this abundant area to lose thousands of acres, moving further away from being a farming community.

Sam and his family believe in continuing the traditions of the “valley of hearts delight.” They are dedicated to preserving the land by utilizing practices such as growing a high diversity of crops, crop rotation, preserving animal habitats and maintaining beehives for natural pollination. They will soon be transitioning to a larger plot of land where they can expand even more on their vision.

The Thorps are very excited about their new farm. The property has been cared for with great love and attention to detail. The soil is fertile, rich in mycorrhizal nutrients and contains high organic matter which is great for soil health and plant matter. The prior owner has been growing apricots since the sixties; he is getting older and is passing the farm on to the Thorps. He wants to see his life’s hard work go to the right people who will truly care for the land and keep farming traditions alive.

The new plot will allow them to expand their crops to include potatoes, dry beans and long term fruit trees. Sam is very excited about developing their flower program in the early spring.

Connecting directly with their consumers through Farmers Markets and a CSA (community supported agriculture) program has enabled Sam, Nick and Mike to thrive by doing what they love. Sustainability, diversity, affordability and accessibility are their top priorities. Spade and Plow is certified as organic by CCOF, one of the nation's most respected certifiers.

At Golden Roots Kitchen you can select a la carte options from our menu such as spring mix, mustard greens, arugula or a mystery farm box of your own. We incorporate Spade & Plow produce in many of our dishes; we highlighted their beautiful rosalba radicchio in our kohlrabi, pink lady apple salad. Sign up directly on the Spade & Plow website for your own customizable CSA farm box where you can connect to the earth’s cycles by eating with the seasons. They have an option to add pasture-raised eggs, locally roasted coffee and fresh bread. Spade & Plow also provides fresh produce to several local Santa Cruz restaurants such as Soif, Alderwood and Bad Animal. Support local farms while supporting local restaurants.

The Golden Roots Kitchen team had the pleasure of touring the Spade & Plow farm. The soil was moist and the greens were lush after a December rain. We were in awe of the patience and love their work takes. We can taste it in every bite of their harvest and we were delighted to take home an assortment of goodies, straight from the soil.

Spade and Plow will be having a transplant sale on May 5th. Pre order on their website for pickup on their new land. They will have tomatoes, peppers, herbs and flowers sold in four inch pots. This is a great way to get your summer garden started.

What is your favorite beauty ritual? What Botanic & Luxe products do you love and can not live without?

Leilani: My favorite beauty ritual is taking a spoily bath with yummy bath salts. My fave are the Sage CBD bath salts we carry at the shop. I almost always enjoy a face mask at the same time. My personal favorite at the moment is our Honey Love mask from Leahlani. It’s packed with vitamin C from exotic fruits and raw Hawaiian honey, also sold at the shop. A product I can not live without lately is the Moss Mornings Sleep Peel. It’s seriously the easiest way to take care of your skin and takes hardly any time or energy. You sleep with it on and then wake up to fresh skin. Such a good mom hack!

Ariel: My favorite beauty ritual is starting my morning each day with a probiotic powder called Glow from The Beauty Chef. We sell it at the store and it’s seriously the best. It gives you glowing skin and tastes so yummy.

Growing up in Hawaii, how do you bring ALOHA into your business and everyday life?

Leilani: In Hawaii everyone is warm and treats each other like a friend, even if they don’t really know each other very well. Everyone says “Hi” to one another and smiles at strangers. We genuinely feel that bringing this mentality to our community is important.This year has really shown us how we are all in this together. 

Ariel: Showing kindness to each and every person we come in contact with is so important to us. In downtown Santa Cruz you definitely meet people from all walks of life, and it’s important to remember we all share this planet and deserve respect and ALOHA.

What do you love about our Santa Cruz community?

Leilani: I love how supportive we are of one another. This community truly supports each other and that’s something really special that is not found everywhere. We feel so connected to the community and appreciate everyone’s openness and warmth. 

Ariel: I love how welcoming everyone is here. I didn’t know anyone in Santa Cruz besides Leilani and a few of her friends when I first moved here, but since then I have met so many warm and wonderful people. It’s been a smooth transition and I’m grateful for that.

How do you balance being business partners, best friends and new mommas? 

Leilani: I think some days are easier than others. Ariel and I have a very solid friendship and know we can get through anything together. We respect each other, love each other, and have made a rule that we can’t talk about the shop when we are having a friend day. This doesn’t always happen, but it is our aim.

Ariel: Communication is key. Lei and I have always been on the same page and communicate openly with each other. Sometimes it feels more like a marriage than a friendship. It is the best!

What sort of self care practices do you make sure to weave into your hectic schedule?

Leilani: I go on daily walks with my husband and baby. I usually go on two walks a day and although I genuinely enjoy my time at work, I’ve been really enjoying my special walks with my little family. Getting out in nature is such an important self care practice and has been so important for my mental well being.

Ariel: I allow myself lots of rest and cooking yummy meals - when I’m not enjoying Golden Roots of course!

Favorite must have plant that brings you joy in your home? 

Leilani: My calathea orbifolia. I am literally obsessed with it and stare at it ten times a day. I’m constantly telling my husband how much I love it, and he’s just like - okay crazy plant lady!

Ariel: My favorite plant has to be a ficus decora. I have one in my bedroom and it’s just so striking and beautiful, a true statement plant!

What is your favorite Golden Roots Kitchen dish?

Leilani: Oh man, this is such a hard question. If I have to choose I would say the Fogline Farm Chicken Ragu. It is seriously so good!

Ariel: I have to go with the Sprouted Seed Bread. It has become a staple in my home. I love it in the morning with a fried egg.

Leilani: Canned organic coconut milk, popcorn kernels because I finally bought an air popper, and steel cut oats. I always have these three items in stock.

Meet Tammy, the owner and juicer of the delicious Anuenue Juice. Golden Roots has had the pleasure of bringing her bright energy into the kitchen, sharing space and trying all of her delicious, organic, cold-pressed juices!

Anuenue translates to rainbow in the Hawaiian language, and the juices extracted from the freshest fruits and vegetables represent the many colors of the rainbow.

Anuenue started on the Hawaiian Island of Lanai as a made to order juice bar and cafe. The juicery was a dream of Tammy’s inspired by her craving for fresh fruits and veggies, that were limited on Lanai — the smallest inhabited island in Hawaii. Her juice bar on Lanai started a wave of appreciation and interest from the locals to incorporate healthier/fresher ingredients into their diet. Anuenue translates to rainbow in the Hawaiian language, and the juices extracted from the freshest fruits and vegetables represent the many colors of the rainbow. The concept of Anuenue Juice aligns with the belief that pigments provided directly from nature offer supportive benefits to the whole body. This dream expanded and Tammy opened another juice bar on Maui, a juice trailer, and now a juice cart.

You will find her sharing her edible art from her adorable cart most Saturdays at Rootstock Artisan Collective located on Pleasure Point.

Golden Roots has had the pleasure of maintaining a connection with Lalita, and we feel she is long overdue for a shout out! Lalita founded Hanloh Thai Food in 2017 here in Santa Cruz, and her business has blossomed ever since.

GRK Community, can you believe that we are nearly coming up on the end of summer? Reflecting on the past months, it is challenging to put into words the grief we are experiencing as a collective. Our hearts go out to those affected by the CZU Lightning Complex Fire, as well as the countless wildfires happening in our California communities. It is hard to believe the loss our communities are suffering from, compounded by a global pandemic. Connection and support are crucial right now, and our community has shown just how strong and resilient our root system is. We are forever grateful for this community, as well as the first responders who are dedicated to protecting the people. We are here for you!

After an unexpected and unsettling break, we have returned to the kitchen to bring you quality, delicious offerings, while maintaining the safety of our customers and staff members. We want to thank you for all of the support during these uncertain times, and we are so grateful that we have been able to serve our community through it all. If you have been riding this wave with us, you have likely noticed that we have a handful of local partnerships whose offerings add such delight and variety to our menu. Meet Lalita Kaewsawang, the face behind Hanloh Thai Food — a partnership we have been thrilled to share through our weekly offerings. Our connection with Lalita began years back while sharing kitchen space at The Bread Box (any day ones in the house?). Golden Roots has had the pleasure of maintaining a connection with Lalita, and we feel she is long overdue for a shoutout! Lalita founded Hanloh Thai Food in 2017 here in Santa Cruz, and her business has blossomed ever since. I loved connecting with Lalita and learning more about her journey, and the inspiration behind her cooking. We wanted to highlight Lalita within our community to learn more about her business, her passion as a chef, and the traditions surrounding Thai Cuisine.  

When asked “what makes Thai food, Thai?”, Lalita expressed that this is a question she has been working through most of her career. She has shifted this question to really hone in on “what is Thai food to me?” She explained her challenge in describing Thai food as a general category because each region of Thailand is known for their unique offerings and flavors. Much of the inspiration of her dishes comes from food she grew up eating — such as her Thai fried chicken, and variations of curries. She has been inspired to duplicate dishes that she remembered from her childhood, and put her own twist on it. 

I learned that much of the Thai food that is served in the US is inspired by Central Thai Cuisine: wok stir frys, noodles, curries, lots of coconut milk, oyster and fish sauce. Whereas in Northern Thailand, where Lalita grew up, the dishes are very simple and earthy. Northern Thai food uses very little coconut milk, sugar or fish sauce, and the food is not as spicy. Lalita made a point that Thai Food is not necessarily meant to be served spicy, and this is something that has been misconstrued in the US. With Thai street food, it is a custom for customers to request the flavor profiles they would like from street vendors. For example, customers can request no sugar, extra chilies, and extra sour.

Hanloh aims to work with seasonal/local produce as much as possible. Fresh produce adds quality and flavor that are simply non-negotiable for many of Hanloh’s creations. Lalita lights up each time the local farmers deliver to the kitchen, knowing that the produce is fresh and from the source. Hanloh aspires to produce minimal waste by using as much of the vegetable as possible and sending home food scraps with employees for compost!

You can find Lalita serving up a depth of delicious dishes around Santa Cruz County. She works out of a shared kitchen space two days a week, preparing all of her offerings with the help of her four kitchen staff. These prepared and pre-packaged meals are then delivered to the GRK kitchen, Sante Adairius Brewery and Santa Cruz Mountain Brewery for pickup. Meals include reheating instructions for at home enjoyment. Pre COVID-19 you would find Hanloh serving up hot plates at popups at these brewery locations, however these pop ups have transitioned to all pre-packaged meals for pickup. Additionally, Hanloh offers catering services for a variety of events such as weddings, private parties and events as well as holiday gatherings. Hanloh has served anywhere from 5-200 people. However, due to COVID-19 catering services have been placed on pause, but Lalita is working on developing a COVID-19 safe menu and serving for events. Although many of Hanloh’s offerings have transitioned, Lalita expresses great gratitude to be able to continue to serve her community during these uncertain times!

I asked Lalita what she orders when she sits down in a Thai food restaurant in the US. Lalita explained that she is a small plates kind of gal — she orders a variety of small plates and eats them as one main course. Her go to choices are Chicken Satay, Tom Yum soup with either tofu or seafood, and a small salad and rice. Are you hungry yet? Next, I asked her what menu items one should try if they are wanting to step outside their comfort zone. She recommended ordering Boat Noodle Soup. Take some time to look into the story behind the tradition of this dish — it’s a delightful tale of Bangkok merchants selling soup from canoes on the canal. Lalita also recommended mango sticky rice, but said the key is to ask the server if their mango is ripe — unripe mango does not make a good mango sticky rice. Fish cakes are also something you should try, according to Lalita — they are found in the appetizer section, but Lalita often orders them as a meal. Make note of these recommendations for the next time you’re browsing the menu at your favorite Thai restaurant.
